4 boneless, skinless chicken breasts with tenders (1 1/2 pounds total)

3 oz. sliced gruyere or swiss cheese

2 tbsp. grainy mustard, divided

8 thin slices prosciutto (3 ounces total)

1 lb. broccolini or broccoli rabe, trimmed

  1. Heat the oven to 400F with the rack in the center position. Coat a baking sheet with cooking spray.
  2. Lay the chicken on the work surface. Lifting up the attached tenders, place one-quarter of the cheese on each breast and spread with 1/2 tablespoon of the mustard. Place the tenders back over the filling.
  3. Wrap 2 slices of the prosciutto around each breast, overlapping them slightly to enclose the filling. Put on the prepared pan.
  4. Bake for 20 minutes, or until a thermometer inserted in the thickest portion registers 165F and the chicken is cooked through. Let stand for 5 minutes.
  5. Bring a pot of water to a boil while the chicken bakes. Add the broccolini or broccoli rabe and cook for 5 minutes, or until just tender. Transfer with tongs to plates. Serve the chicken with the broccolini.
